Ingredients:
150g rice
270g water
300g water
250g koji
Instructions:
1. cook rice with 270g water.
2. add 300g water to cooked rice.
3. cool it down and make sure the rice is under 158F/70C.
4. add koji and let it ferment at 150F/65C for 8 hours.
